The secret to tagine’s popularity lies in the way in which it cooks. A tagine is essentially a braising device whereby the difference in temperature between the base and the top of the conical top causes steam to rise and then condensate back onto the food. Raised bumps on the underside of the lid cause the evaporated juices to drip evenly over the entire dish rather than solely down the sides as with regular pots.

This effect means the food is continuously basted whilst cooking, leading to a deliciously tender and moist dish.
